Recipe: Vegan Sushi Bowl by That Vegan Life Doe

Ginger steamed sushi rice with sesame avocado, shredded nori, and a mirin vinaigrette

Sushi Rice

1 cup rice
1 1/4 cup water
2 tsp salt
2 tbsp grated ginger

To remove the starch, rinse rice in water until the water is clear. Strain the rice and add it to a pot with water. Bring rice, water and salt to a boil. Reduce heat, cover and cook for 20 minutes. When rice is cooked, stir in fresh ginger and set aside.

Avocado

1⁄2 avocado (per serving)
1 tsp sesame oil
1 tsp seasoned rice wine vinegar 1/2 sheet organic nori shredded

Dice avocado and season with salt, sesame oil, and vinegar. Keep shredded nori for the end.

Mirin vinaigrette

2 tbs mirin
1 tbs rice vinegar
Pinch of toasted sesame seeds 1 tsp minced scallions
1/2 tsp sesame oil

Mix all together.

To assemble dish, add 1 cup of cooked rice to a bowl, top with avocado and shredded nori. Garnish with scallions and toasted sesame seeds. Drizzle vinaigrette on top. Voila!
