Recipe: Sweet Potato 3 Ways With Yes Let’s Eat

If there is one food I cannot live without, it is the ever so humble potato. It is the foundation to most of my favorite meals. It is extremely versatile. Sweet, red, white, or russet – I love em all! Not to mention any preparation has me hooked!
The potato occasionally gets a bad rep in the dieting world. It is a high carbohydrate food, containing almost 95% carbs and less than 1% fat. In the vegan diet that I eat, I find carbs to be essential to my health and well being. I am an athlete, typically working out for an hour or more a day. I love running and staying active, so having the energy that carbs provide is huge! Even if you are not vegan, don’t fear carbs like the potato – they rock! The sweet potato in particular is high in carotenoids, which has been linked to warding off cancer and aging! It also is high in magnesium, iron, and potassium.
For today’s sweet potato recipe, we’re doing something oh so trendy – sweet potato toast. This recipe has been on Instagram, Pinterest, and Facebook, so I figured I’d give it a try. It’s extremely simple, and I have three topping choices I know you’ll love.
To prepare the base, cut 1 sweet potato lengthwise into the toast shape. Then, turn your toaster to the highest setting, add your sweet potato and cook. I did 3 cycles of this until the sweet potato was cooked to my liking!
Now for the fun part – toppings!
1 sweet potato toast
1/4 cup chickpeas
2 tsp hummus
2 tsp red onion
1/4 apple, finely sliced
seasonings: paprika, cilantro, garlic powder

Mash together chickpeas, hummus, onion, and seasonings to create a chickpea mash. First, layer sliced apple on sweet potato toast, top with chickpea mash, then drizzle mustard on top.

1 sweet potato toast
1/4 cup black beans, mashed
2 tbsp pineapple salsa
fresh cilantro
seasonings: chili powder and garlic powder

Add seasonings to mashed black beans. Top toast with black beans then scoop on salsa and garnish with fresh cilantro.

1 sweet potato toast
handful of spring greens
1/4 tomato, sliced
few slices of red onion

Add all ingredients on top of sweet potato toast!
