Recipe: Thumbprint Cookies


My soon-to-be 8 year old daughter is super easy to cook for, as she basically eats everything I do, from green juices to vegan lasagna, but breakfast has always been…interesting. She is not one for toast, pancakes, cereal, oatmeal, and the list goes on. Enter breakfast cookies! I am always thinking up limited sugar recipes abundant in health benefits and nutritional goodness to get her powered through her mornings, especially on busy school days!

We switch up all kinds of gf flours, but lately have been enjoying the flavourful, nutrient density of bob’s redmill paleo flour, with almond, coconut, tapioca and arrowroot, this blend is a protein rich powerhouse, with a beautiful dose of fiber and omega 3 fatty acids!

The beautiful benefits of chaga, reishi and cordyceps are as vast as they come, best known for their immune modulating polysaccharides, they are a world of goodness all their own, and a great idea to add to all culinary endeavours.  From the almighty immune boosting chaga, to the heart nourishing benefits if reishi and the lung and kidney tonifying qualities of cordyceps! And you can’t taste anything shroomy in the cookies!

Preheat oven to 350, prepare baking dish by greasing or covering with parchment paper, and prepare a bowl.

Add together:

1 peeled and finely grated gala apple
1.5 cups bob’s redmill paleo flour or other such flour of choice (you can also make your own!)
3 tbsp turmeric ghee or coconut oil
3 tbsp almond butter
3-4 tbsp coconut sugar or lakanto (taste dough as you knead to adjust sweetness to your personal preference, we found that 3 tbsp was just right for us;))
1 tsp ceylon cinnamon
1/4 tsp Himalayan sea salt
1/4 tsp each chaga, reishi, cordyceps (optional. You don’t have to add any or if you like you can add just 1 type)
Jam of choice (homemade chia jam is amazing too!) We used Crofter’s sugar free raspberry jam. Add after making dough!

Knead dough into doughball, roll into balls (about 1/2 ping pong ball) and make “thumb” dent in the centre, forming the edges so they stay together. Add a dollop of jam in the centre and bake for 12-15 minutes!
