Recipe: Lotus and Taro Chips

Lotus Chips (and Taro Root as well) are a beyond delicious snack. You can even buy pre-cut lotus root in asian markets and on food websites to make it even easier than it already is!

(only use this step if you do not buy the pre-cut.) Wash and peel the lotus (or taro) root, removing any brown bits, just like a potato. Sliced 1/8 inch thick.
Microwave for 2 minutes (coat the plate in olive oil so it doesn’t stick) and then soak in water with a tbsp of lemon juice until cooled down (around 10 minutes)
Get the lotus (or taro) root out of the water bath and pat down with a towel.
Heat the oven 450 f (232 c).
Take olive oil and spices (up to you! – I prefer rosemary, but I also love chili powder) mixture and brush over the root (both sides) and then put onto a baking sheet.
Bake until a golden color.
They are just like potato chips, but way healthier for you. Find a seasoning that works for you!!
