Recipe: Healthy Fudge Truffles

An indulgent gluten, dairy and refined sugar free treat!

This is one of the first recipes I came up after launching my blog, and it has proven to be one of the most popular! If you’re craving chocolate, this recipe makes a perfect healthier alternative. It is so easy to make and full of healthy fats. I suggest making a batch at the start of each week, so you always have them on hand!

INGREDIENTS

2 cups pitted dates

1 cup hazelnut meal

1 cup walnuts

1/4 cup vital vanilla protein (optional)

3 tablespoons coconut oil, melted

3 tablespoons macadamia nut milk (or almond) (+ 1 tbsp warm water if mixture is too dry)

1/2 cup cacao powder

1/2 cup desiccated coconut

METHOD

  1. Place all ingredients in food processor, process until well combined and the mixture becomes dough like.
  2. Roll into balls to desired size and coat with desiccated coconut.
  3. Place in fridge to set then enjoy!

Tip: Store in fridge to keep chilled so they maintain their fudge-like texture.
