Recipe: Birthday Cake Cookie Dough

I love this recipe because it is a healthy alternative to traditional cookie dough. Chickpeas are a great plant based source of protein, carbohydrates, and fiber. They help control blood sugar levels and increase satiety which can help in weight loss. I added flaxseed to this recipe because it contains omega 3 essential fatty acids (good fats) which have been shown to to have heart-healthy effects. They are loaded with vitamins, minerals, and lignans which is are plant compounds that have antioxidants, which can help lower the risk of cancer and improve health. I love incorporating plant based protein in my diet as I am intolerant to dairy, therefore I cannot have whey protein powder. For many people whey causes gas, bloating, and discomfort, and plant based protein can be a great alternative! The last ingredient I would like to mention are collagen peptides. I sneak collagen into all of my baking and smoothies! Collagen supports bone and joint health, along with healthy skin, hair and nails. It has also been proven to support gut health, which is so important to me! Some may find it unhealthy to add the chocolate chips and birthday sprinkles, I however find it lightens up my eating experience. I like to think of food as art. Don’t be scared to have fun with your food, it is not the enemy!

 

INGREDIENTS:
1 can chickpeas
1/2 cup @buffbake birthday cake almond spread
1/8 tsp baking soda
1/8 tsp himalayan pink sea salt
2 tsp vanilla extract
1/2 tsp cinnamon
2 tbsp flaxseed
2 scoops plant based vanilla protein powder
2 tbsp collagen peptides
1/4 cup unsweetened almond milk
1/3 cup vegan chocolate chips
a few birthday sprinkles

DIRECTIONS:
Mix everything besides chocolate chips and birthday sprinkles in a food processor until it forms a dough consistency. Once combined, fold in the chocolate chips and birthday sprinkles, because life is too short not to have fun with your food!!
