Pickled Ginger and Apple Salad Recipe

From the very earliest, most precious days of motherhood, I noticed a small window in an otherwise full day, a loophole of sorts. In those very quiet moments, when my babies would sleep, I discovered a precious few minutes just for myself. If you’re lucky enough to have good day sleepers, it is of course tempting to use this quiet, almost eerie time of the day to rush around like a headless chook completing household chores. If this sounds familiar, I urge you to reconsider.

Not only is there good merit in allowing children to witness the undertaking of otherwise mundane chores, but it’s a sacred opportunity for mama to recharge, refuel and nourish herself, thereby presenting a rested, reinvigorated version of herself for the afternoon and evening ahead. At the risk of jinxing myself, as my girls have grown, laundry time has become a time for us to sit together, fold and talk, without the distractions of modern day life. Incredibly, we all look forward to it. Go figure. And when it comes to rest time and that meal which is so often neglected, I have become a dedicated salad creator. Indulging in some quiet time to complete my creative projects, whilst nourishing myself to the core . . . Below is one of my favorite salads. And even if I inspire just one of you to take that time to nourish yourself, my job is done.

Pickled Ginger & Apple Salad

Recipe by Shelley Kamil

Ingredients

Serves 1 

½ block firm organic tofu, approx. 120grams, cut to cubes (tofu is important to buy organic)
1tbs Tamari
1tsp Avocado Oil
1/2 Red Fuji or Jazz Apple, finely sliced
4 florets broccoli, blanched and chopped
6 cherry tomatoes
1 small beetroot, grated
1 carrot, grated
¼ cup pickled ginger
1tbs white sesame seeds
¼ avocado, sliced
Generous handful of pea shoots, finely sliced
Cos lettuce leaves, or green leaves of choice
1 cup cooked brown rice
1tsp Tamari

Dressing 

1tbs pickling liquid (reserved from pickled ginger)
1tsp Sesame Oil
1tsp Apple Cider Vinegar
1tbs Tamari
Juice of half a lemon

Directions

  • Heat 1tsp Avocado Oil in a medium sized nonstick skillet over medium heat. Add the tofu and panfry for 3-4 minutes, turning occasionally, until golden. Add the Tamari and cook for another minute or two. Remove from the heat.
  • In a small mixing bowl, whisk together the dressing ingredients.
  • To assemble the salad, begin with your leaves of choice, then brown rice as a base. Neatly arrange the apple, broccoli, cherry tomatoes, beets, carrots, pickled ginger, avocado and pea shoots, before topping with cooked tofu, a sprinkling of sesame seeds, a drizzle of dressing and then finally giving it a good, gentle mix
